There are too many ramen shops sprouting around Singapore in the recent months and Tonkotsu Kazan Ramen (Novena Square 2) is one of our latest discovery.
Their specialty of course – The Kazan Ramen, ramen served in a stone bowl paired with a coned-shaped, volcano like lid that “emits” out the hot steam from the dish.
Each table includes a step by step guide on how to cook the ramen and an hour glass timer - the kind that brings back childhood memories of late night board games.

The Karzan Ramen -

Soup stocks are refillable.

You’ll know the ramen is ready once you see the steam coming out of the “exhaust”.

Take off the lid and take a min to appreciate the food. In my case, taking a snap.

Give it a good mix and the ramen is ready.
Each bowl of ramen also comes with 1 small bowl of rice, these are enough to be shared between 2 people. The bowl of rice is meant to be added to the soup stock once you finish the ramen – just in case the noodles did not hit the bottom of your pit.
An order of gzoya for good measures, it tasted like it came out from a frozen pack of…

We enjoyed the ramen, the noodles are thicker than the usual which ensures that it does not turn soggy too quickly – given the super hot temperature of the bowl.
A good selection of the more traditional ramens are also on the menu for those who don’t fancy the volcano-like ensemble.
